my dried fish curry..yummy!!

Ingredients
- 200g dried fish (any of your choice)
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1 teaspoon ground coriander
- Salt to taste
- Fresh cilantro leaves for garnish.
How to prepare
- Prepare the Dried Fish: Rinse the dried fish under cold water to remove any excess salt. Soak the dried fish in warm water for about 30 minutes to rehydrate it slightly. Drain and set aside.
- Sauté Aromatics: Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Add the minced garlic and grated ginger, and continue to sauté for another 1-2 minutes until fragrant.
- Add Tomatoes and Spices: Add the chopped tomatoes to the skillet and cook until they break down and form a thick paste, about 5-7 minutes. Stir in the turmeric powder, chili powder, ground coriander, and salt. Cook the spice mixture for another 2-3 minutes until the flavors meld together.
- Cook the Dried Fish: Gently add the soaked dried fish to the skillet, ensuring it is submerged in the tomato and spice mixture. Cover the skillet and let the fish cook over low heat for about 10-15 minutes, stirring occasionally, until the fish is tender and absorbs the flavors of the curry.
Serve the dried fish curry hot with steamed rice or crusty bread.
