Ingredients:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/3 cup unsalted butter, cold and cubed
- 2/3 cup milk
- Clotted cream
- Jam (strawberry or raspberry)
Directions:
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- Add the cold cubed butter to the flour mixture and use your fingertips to rub it into the flour until the mixture resembles coarse crumbs.
- Make a well in the center of the mixture and pour in the milk. Stir until just combined, being careful not to overmix.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
- Pat the dough into a circle about 3/4 inch thick. Use a floured biscuit cutter to cut out rounds of dough and place them on the prepared baking sheet.
- Bake for 10-12 minutes, or until the scones are golden brown on top.
- Transfer the scones to a wire rack to cool slightly before serving.
- Serve warm with clotted cream and jam.
Cook’s Note:
For a dairy-free version, you can substitute dairy-free margarine for the butter and use almond or soy milk instead of regular milk.
