  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup unsalted butter, cold and cubed
  • 2/3 cup milk
  • Clotted cream
  • Jam (strawberry or raspberry)

Directions:

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Add the cold cubed butter to the flour mixture and use your fingertips to rub it into the flour until the mixture resembles coarse crumbs.
  4. Make a well in the center of the mixture and pour in the milk. Stir until just combined, being careful not to overmix.
  5. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
  6. Pat the dough into a circle about 3/4 inch thick. Use a floured biscuit cutter to cut out rounds of dough and place them on the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the scones are golden brown on top.
  8. Transfer the scones to a wire rack to cool slightly before serving.
  9. Serve warm with clotted cream and jam.

For a dairy-free version, you can substitute dairy-free margarine for the butter and use almond or soy milk instead of regular milk.
