Ingredients
- 2 pounds raw chicken tenders, cut into smaller pieces
- 1 Tbsp corn oil
- 1 cup onions, julienned
- 1 tsp chopped garlic
- 2 tsp minced ginger root
- ¾ cup fresh tomatoes, diced
- 1 tsp ground cumin
- ½ tsp ground turmeric
- 1 tsp ground coriander
- ½ tsp mild chili powder
- ¼ tsp black pepper
- ½ tsp ground cloves
- ½ tsp ground cardamom
- 2 tsp salt
- 2 ½ cups canned tomatoes, crushed in puree
- 1 Tbsp plus ½ tsp water
- 3 ½ Tbsp chopped fresh cilantro
Instructions
- Start by sautéing the onions until they are halfway browned.
- Add the garlic and ginger and continue to sauté until golden.
- Add the chicken and cook until it is browned.
- Add the fresh diced tomatoes and cook for 5 minutes.
- Add all the spices and cook for 3 more minutes.
- Add the crushed canned tomatoes and cook for 5 minutes.
- Then add water and cook on medium heat for 30 minutes.
- When the curry is cooked, add fresh cilantro.
