Ingredients

  • 1 pound (about 450g) grape tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 3-4 cloves garlic,
  • Fresh herbs like thyme or rosemary

How To Prepare

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Tomatoes: Wash the grape tomatoes and pat them dry with a paper towel. If desired, you can slice them in half lengthwise for quicker roasting and enhanced flavor.
  3. Season the Tomatoes: In a mixing bowl, toss the grape tomatoes with olive oil until they are evenly coated. If using minced garlic and fresh herbs, add them to the bowl as well. Season with salt and pepper to taste, and toss again to ensure the tomatoes are well seasoned.
  4. Arrange on a Baking Sheet: Spread the seasoned grape tomatoes in a single layer on a baking sheet lined with parchment paper or aluminum foil. Make sure they are not overcrowded to ensure even roasting.
  5. Roast in the Oven: Place the baking sheet in the preheated oven and roast the grape tomatoes for about 15-20 minutes, or until they start to blister and burst, and their skins become slightly caramelized.

Once the tomatoes are roasted to your desired level of tenderness, garnish the roasted grape tomatoes with additional fresh herbs, such as chopped parsley or basil, before serving.
