Ingredients:

  • 1 cup heavy cream
  • 1 vanilla bean (or 1 teaspoon pure vanilla extract)
  • 4 large egg yolks
  • 1/4 cup granulated sugar (plus extra for caramelizing)
  • A pinch of salt

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 325°F (163°C).
  2. Infuse the Cream:
    • In a saucepan, heat the heavy cream over medium-low heat.
    • Split the vanilla bean lengthwise and scrape out the seeds. Add both the seeds and the pod to the cream.
    • Heat until small bubbles form around the edges. Remove from heat and let it steep for about 10 minutes.
  3. Prepare the Custard Base:
    • In a separate bowl, whisk the egg yolks, granulated sugar, and a pinch of salt until pale and smooth.
    • Gradually pour the warm vanilla-infused cream into the egg mixture, whisking constantly.
  4. Strain and Fill:
    • Remove the vanilla pod from the cream.
    • Strain the custard through a fine-mesh sieve into a measuring cup.
    • Divide the custard among ramekins (about 4-6, depending on size).
  5. Bake in a Water Bath:
    • Place the ramekins in a baking dish.
    • Fill the dish with hot water until it reaches halfway up the sides of the ramekins.
    • Bake for approximately 25-30 minutes, or until the custard is set but still slightly jiggly in the center.
  6. Chill and Caramelize:
    • Remove the ramekins from the water bath and let them cool.
    • Refrigerate for at least 2 hours (or overnight) to chill.
    • Just before serving, sprinkle a thin layer of granulated sugar over each custard.
    • Use a kitchen torch to caramelize the sugar until it forms a crispy top.

Cook’s Note:

  • If you don’t have a kitchen torch, you can place the ramekins under the broiler for a few seconds to caramelize the sugar.
  • For a twist, infuse the cream with other flavors like orange zest or lavender.
