- Ingredients:
- 2 medium beets, peeled and grated
- 2 medium potatoes, diced
- 1 onion, finely chopped
- 2 carrots, grated
- 2 cloves garlic, minced
- 4 cups vegetable or beef broth
- 2 tablespoons tomato paste
- 1 tablespoon olive oil
- 1 tablespoon vinegar
- 1 bay leaf
- Salt and pepper to taste
- Sour cream and fresh dill for garnish
- Preparation:
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the grated beets, carrots, and diced potatoes to the pot. Stir well to combine.
- Cooking:
- Pour in the vegetable or beef broth, add the bay leaf, tomato paste, vinegar, salt, and pepper. Bring to a boil, then reduce the heat to low. Cover and simmer for 10-12 minutes, or until the vegetables are tender.
- Serve:
- Once the borscht is ready, remove the bay leaf and discard. Ladle the soup into bowls and garnish with a dollop of sour cream and a sprinkle of fresh dill.
