  • 1/2 cup rolled oats (ground or quick oats)
  • 1 tablespoon chia seeds
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons raisins or other dried fruit, finely chopped
  • 1 teaspoon maple syrup or honey (optional)
  • 3/4 cup warm milk (dairy or nondairy)

Instructions

  1. Preheat your oven to 375°F and grease silicone molds or a mini muffin tin.
  2. In a medium bowl, combine the oats, chia seeds, cinnamon, vanilla extract, raisins (or dried fruit), and maple syrup or honey, if using.
  3. Pour in the warm milk and stir well. Let the mixture sit for about 5 minutes.
  4. Press approximately 1 tablespoon of the batter into each mold or mini muffin cup.
  5. Bake for 10-14 minutes, or until the oatmeal cups are set and golden brown around the edges.
  6. Allow the cups to cool in the pan for 5-10 minutes before transferring them to a wire rack to cool completely.
  7. Serve the oatmeal cups slightly warm or chilled for a delightful breakfast or snack.
