  • 2 pounds beef chuck roast, sliced into thin strips
  • 1 cup low-sodium soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Optional: sesame seeds and sliced green onions for garnish

Instructions:

  1. In a bowl, whisk together the soy sauce, brown sugar, rice vinegar, minced garlic, and grated ginger until the sugar has dissolved.
  2. Place the sliced beef in the slow cooker and pour the teriyaki sauce over it, making sure the beef is well coated.
  3. Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the beef is tender and cooked through.
  4. In a small bowl, mix together the cornstarch and water to make a slurry. Stir the slurry into the slow cooker with the beef and sauce, then cover and cook for an additional 30 minutes on high heat, or until the sauce has thickened.
  5. Once the sauce has thickened, serve the beef teriyaki over cooked rice or noodles, garnished with sesame seeds and sliced green onions if desired.

Cook’s Note:
If you don’t have rice vinegar on hand, you can substitute it with apple cider vinegar or white vinegar in a pinch. Additionally, if you prefer a thicker sauce, you can increase the amount of cornstarch in the slurry or simmer the sauce on the stovetop after thickening in the slow cooker until it reaches your desired consistency.
