Ingredients:

  • 1 cup cooked quinoa (cooled)
  • 1 medium carrot, diced
  • 1 red bell pepper, thinly sliced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, sliced
  • 2 eggs, beaten
  • Optional: Sriracha or chili flakes for a kick

Instructions

  1. Sauté the Veggies:
    • Heat a wok or large skillet over medium-high heat.
    • Add a splash of oil and sauté the minced garlic until fragrant.
    • Add the diced carrot, sliced bell pepper, and frozen peas. Stir-fry until the veggies are tender-crisp.
  2. Add Quinoa and Sauce
    • Push the veggies to one side of the wok.
    • Pour the beaten eggs into the other side and scramble them.
    • Once the eggs are cooked, mix them with the veggies.
    • Add the cooled quinoa to the wok and stir everything together.
  3. Season and Serve
    • Drizzle the soy sauce and sesame oil over the quinoa mixture.
    • Toss well to coat all the ingredients.
    • If you like it spicy, add a dash of Sriracha or chili flakes.
    • Garnish with sliced green onions

How to Serve
