Ingredients:
- ¾ cup milk
- ⅓ cup vegetable oil
- 1 egg
- 2 cups all-purpose flour
- ½ cup white sugar
- 3 teaspoons baking powder
- ½ teaspoon salt
- ¾ cup mini semi-sweet chocolate chips
Directions:
- Preheat the Oven: Set your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin or line it with paper liners.
- Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, sugar, and salt.
- Prepare Wet Ingredients: In a separate bowl, whisk together the milk, vegetable oil, and egg until well combined.
- Combine Wet and Dry: Make a well in the center of the dry mixture. Pour in the wet mixture and stir gently until just combined. Be careful not to overmix; a few lumps are okay. Fold in the mini chocolate chips.
- Fill the Muffin Cups: Spoon the batter evenly into the prepared muffin cups, filling each about ¾ full.
- Bake to Perfection: Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The tops should be golden brown and slightly springy.
- Cool and Enjoy: Remove the muffins from the tin and let them cool on a wire rack. Serve warm or at room temperature.
Cook’s Note:
- Alternative Ingredients: If you’re out of vegetable oil, feel free to use melted butter or coconut oil. You can also swap the mini chocolate chips for regular-sized ones or even chunks of dark chocolate.
