Ingredients

  • 2 beef sirloin steaks (about 8 oz each)
  • Salt and black pepper, to season
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 cup sliced cremini mushrooms (or any mushrooms you prefer)
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • Fresh parsley, chopped (for garnish)

Directions

  1. Season and Sear the Steaks:
    • Pat the steaks dry with paper towels. Season both sides generously with salt and black pepper.
    • Heat the olive oil in a skillet over medium-high heat. Add the steaks and sear for about 3-4 minutes per side (for medium-rare). Adjust the time based on your preferred doneness. Remove the steaks from the skillet and let them rest.
  2. Make the Mushroom Sauce:
    • In the same skillet, melt the butter. Add the minced garlic and sliced mushrooms. Sauté until the mushrooms are golden and fragrant.
    • Pour in the beef broth and let it simmer for a minute.
    • Stir in the heavy cream and let the sauce thicken slightly. Season with additional salt and pepper if needed.
  3. Plate and Serve:
    • Place the rested steaks on serving plates.
    • Spoon the mushroom sauce generously over the steaks.
    • Garnish with chopped fresh parsley for a pop of color.

Cook’s Note

  • Alternative Mushrooms: If cremini mushrooms are hard to find, use white button mushrooms—they work beautifully too.
  • Creamy Variation: Swap heavy cream for half-and-half if you prefer a lighter sauce.
