Ingredients:

  • 4 fillets of white fish (such as cod or haddock)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup cold sparkling water
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 4 large potatoes, peeled and cut into thick fries

Directions:

  1. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  2. Gradually pour in the cold sparkling water while whisking until a smooth batter forms. Let the batter rest while you prepare the potatoes.
  3. Heat the vegetable oil in a deep fryer or large pot to 350°F (180°C).
  4. Carefully add the potato fries to the hot oil and fry until golden brown and crispy, about 5-7 minutes. Remove them from the oil and drain on paper towels. Season with salt while still hot.
  5. Dip each fish fillet into the batter, ensuring it’s fully coated.
  6. Gently place the battered fish into the hot oil and fry for 4-6 minutes until golden brown and cooked through.
  7. Remove the fried fish from the oil and drain on paper towels.
  8. Serve the fish and chips hot with tartar sauce, malt vinegar, or your favorite condiments.

Optional Cook’s Note: If you prefer a lighter version, you can bake the fish and fries in the oven instead of frying them.
