Garlic and herb-seasoned chicken is a flavorful dish that combines the rich taste of garlic with the fragrant essence of assorted herbs.

Ingredients

  • 4 bone-in, skin-on chicken thighs or drumsticks
  • 4 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of fresh herbs (such as rosemary, thyme, and parsley), chopped
  • Salt and pepper to taste

Directions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine the minced garlic, olive oil, chopped herbs, salt, and pepper to create a marinade.
  3. Pat the chicken thighs or drumsticks dry with paper towels, then place them in a large bowl or a resealable plastic bag.
  4. Pour the herb and garlic marinade over the chicken, making sure each piece is evenly coated. Massage the marinade into the chicken to ensure it’s well distributed.
  5. Cover the bowl or seal the bag, then refrigerate the chicken for at least 30 minutes to allow the flavors to meld.
  6. After marinating, transfer the chicken to a baking dish lined with parchment paper or lightly greased.
  7. Arrange the chicken pieces in a single layer in the baking dish, skin-side up.
  8. Bake the chicken in the preheated oven for 25-30 minutes, or until the skin is golden brown and the internal temperature reaches 165°F (75°C) when measured with a meat thermometer.

Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving.
