Directions:

Ingredients:

  • 2 lbs stewing beef or lamb, cubed
  • 4 large potatoes, peeled and diced
  • 3 carrots, peeled and sliced
  • 2 onions, diced
  • 4 cups beef or vegetable broth
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

  1. Prepare Ingredients: Gather all the ingredients and prepare them as instructed.
  2. Brown the Meat: In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the cubed meat and brown on all sides. Remove the meat from the pot and set it aside.
  3. Sauté Aromatics: In the same pot, add the diced onions and garlic. Sauté until they turn translucent and aromatic.
  4. Add Remaining Ingredients: Return the browned meat to the pot. Add the diced potatoes, sliced carrots, beef broth, tomato paste, and dried thyme. Season with salt and pepper to taste.
  5. Simmer: Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 1 to 1.5 hours, or until the meat is tender and the vegetables are cooked through.
  6. Adjust Seasoning: Taste the stew and adjust the seasoning if needed.
  7. Serve: Ladle the hot stew into bowls, garnish with chopped fresh parsley, and serve immediately. Enjoy with crusty bread or alongside a pint of Guinness for an authentic Irish experience!

Cook’s Note: If lamb or beef is unavailable, you can substitute it with chicken or turkey for a lighter version of the stew.
