Ingredients
- 8 large eggs
- 1/4 cup milk (dairy or non-dairy)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 cup asparagus, trimmed and cut into 1-inch pieces
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach leaves
- 1/4 cup chopped fresh herbs (such as parsley, chives, or basil)
- 1/2 cup crumbled goat’s cheese (or feta cheese)
Directions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. Set aside.
- Heat the olive oil in a large oven-safe skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes.
- Add the asparagus pieces to the skillet and cook for another 3-4 minutes, until they begin to soften.
- Stir in the cherry tomatoes and cook for an additional 2-3 minutes, until they start to release their juices.
- Add the baby spinach leaves to the skillet and cook until wilted, about 1-2 minutes.
- Pour the egg mixture evenly over the vegetables in the skillet. Sprinkle the chopped fresh herbs and crumbled goat’s cheese evenly over the top.
- Cook the frittata on the stovetop for 3-4 minutes, until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set in the center and lightly golden brown on top.
- If desired, sprinkle some additional grated cheese over the top of the frittata during the last few minutes of baking.

Once cooked, remove the skillet from the oven and let the frittata cool for a few minutes before slicing and serving.
