Ingredients

  • 1 pound (about 450g) fresh green beans, ends trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

How To Prepare

  1. Prepare the Green Beans: Rinse the green beans under cold water and pat them dry with paper towels. Trim off the ends.
  2. Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are bright green and slightly tender. Be careful not to overcook them; you want them to remain crisp.
  3. Shock the Green Beans: Immediately transfer the blanched green beans to a bowl of ice water to stop the cooking process. This helps them retain their vibrant color and crisp texture. Once cooled, drain the green beans and pat them dry.
  4. Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to let the garlic burn.
  5. Add the Green Beans: Add the blanched green beans to the skillet with the garlic. Toss them in the garlic-infused oil until they are well coated. Season with salt and pepper to taste.
  6. Cook until Tender: Continue to cook the green beans in the skillet for another 2-3 minutes, stirring occasionally, until they are heated through and tender but still crisp.

Tips To Serve: When you are done cooking and ready to serve..squeeze fresh lemon juice over the top for a burst of brightness.
