Ingredients:

  • 4 large eggs
  • 2 large potatoes, peeled and thinly sliced
  • 1 onion, thinly sliced
  • 1/4 cup olive oil

  1. Prepare Potatoes and Onions: Heat olive oil in a non-stick skillet over medium heat. Add the thinly sliced potatoes and onions. Season with salt and pepper. Cook, stirring occasionally, until the potatoes are tender and lightly golden, about 8-10 minutes. Remove from heat and let it cool slightly.
  2. Beat Eggs: In a large mixing bowl, beat the eggs until well combined. Season with salt and pepper.
  3. Combine Eggs with Potatoes and Onions: Add the cooked potatoes and onions to the beaten eggs. Gently fold until evenly coated.
  4. Cook the Tortilla: Heat a clean non-stick skillet over medium heat. Add a tablespoon of olive oil. Pour the egg mixture into the skillet, spreading it out evenly. Cook for 3-4 minutes, or until the edges start to set.
  5. Flip the Tortilla: Carefully flip the tortilla using a large plate or lid. Slide it back into the skillet to cook the other side until golden brown and cooked through, about 3-4 minutes.
