Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Step by Step on how to prepare

  1. Sauté Aromatics: Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.
  2. Brown Chicken: Add the bite-sized chicken pieces to the pot and cook until browned on all sides, about 5-6 minutes.
  3. Add Vegetables: Stir in the diced carrots and celery, and cook for an additional 5 minutes until slightly softened.
  4. Thicken Stew: Sprinkle the flour over the chicken and vegetables, and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
  5. Add Broth and Seasonings: Gradually pour in the chicken broth, stirring constantly to prevent lumps from forming. Add the dried thyme, salt, and pepper to taste.
  6. Simmer: Bring the stew to a simmer and let it cook for about 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Add Peas and Cream: Stir in the frozen peas and heavy cream. Let the stew simmer for an additional 5 minutes, or until heated through.
  8. Adjust Seasoning: Taste the stew and adjust the seasoning if needed, adding more salt and pepper as desired.

Ladle the creamy chicken stew into bowls and garnish with chopped fresh parsley, if desired. Serve hot and enjoy!
