Ingredients:
For the filling:

  • 1 1/2 pounds cream cheese, softened to room temperature
  • 3 large eggs, room temperature
  • 14 ounces sweetened condensed milk
  • 1 teaspoon vanilla extract

For the crust:

  • 1 1/2 cups Graham cracker crumbs
  • 8 tablespoons melted butter

Instructions:

  1. Preparation:
  • Preheat the oven to 325 degrees Fahrenheit.
  • In a stand mixer, combine the softened cream cheese and sweetened condensed milk on medium speed until smooth.
  • Add the vanilla extract, followed by the eggs, one at a time, until thoroughly mixed. Set aside.
  1. Crust Preparation:
  • In a separate bowl, mix the Graham cracker crumbs, melted butter, and sugar together with a wooden spoon.
  • Spread the crumb mixture evenly in a 10″ springform pan, pressing it firmly with your hand to form the crust.
  • Cover the exterior of the pan with foil to prevent water seepage.
  1. Filling Assembly:
  • Pour the prepared cream cheese filling into the crust-lined springform pan.
  1. Baking:
  • Place the filled springform pan in a larger shallow roasting pan.
  • Fill the roasting pan with enough hot water so that it reaches the level of the top of the filling (about 4-6 cups).
  • Bake the cheesecake for one hour on the center rack of the oven.
  1. Cooling:
  • After baking, turn off the oven and prop open the oven door.
  • Allow the cheesecake to cool slowly in the oven for another hour.

How to Serve:
