Ingredients:

  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups fresh broccoli florets (about 1 large head)
  • 3 cups low-sodium chicken or vegetable broth
  • 1 cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper, to taste
  • Optional toppings: additional shredded cheese, croutons, or chopped fresh parsley

Instructions:

  1. Sauté the Aromatics:
    • In a large soup pot or Dutch oven, melt the butter over medium heat.
    • Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 5 minutes.
  2. Add Broccoli and Broth:
    • Add the broccoli florets to the pot. Stir to combine with the onions and garlic.
    • Pour in the chicken or vegetable broth. Bring to a simmer and cook until the broccoli is tender, about 10 minutes.
  3. Blend the Soup:
    • Use an immersion blender or transfer the soup to a regular blender (in batches if needed).
    • Blend until smooth and creamy. Be careful when blending hot liquids!
  4. Return to the Pot:
    • Pour the blended soup back into the pot.
    • Stir in the whole milk and shredded cheddar cheese. Season with salt and pepper to taste.
  5. Heat and Serve:
    • Heat the soup over low heat, stirring occasionally, until the cheese is fully melted and the soup is heated through.
    • Ladle into bowls and garnish with additional shredded cheese, croutons, or chopped parsley if desired.
  6. Cook’s Note:
    • If you’re short on fresh broccoli, you can use frozen broccoli florets. Just adjust the cooking time accordingly.
    • For a lighter version, use reduced-fat cheese and skim milk.
    • Feel free to add a pinch of nutmeg or a dash of hot sauce for extra flavor.
