Ingredients
- 1 lb beef stew meat, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups water
- 2 cups cabbage, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
How to prepare
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened, about 3-4 minutes.
- Add the beef stew meat to the pot and cook until browned on all sides, about 5-6 minutes.
- Pour in the beef broth and water, and bring the mixture to a simmer.
- Add the chopped cabbage, sliced carrots, sliced celery, diced tomatoes (with their juices), dried thyme, and dried oregano to the pot. Stir to combine.
- Season the soup with salt and pepper to taste.
- Cover the pot and let the soup simmer for 25-30 minutes, or until the beef is tender and the vegetables are cooked through.
- Taste the soup and adjust the seasoning if needed.
