  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Fresh cilantro leaves for garnish

Instructions:

  • In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.
  • Add the sliced chicken breast and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add another tablespoon of vegetable oil if needed.
  • Add the sliced bell peppers, onion, and broccoli florets.
  • Stir-fry the vegetables until they are tender-crisp, about 4-5 minutes.
  • Return the cooked chicken to the skillet.
  • Pour the stir-fry sauce over the chicken and vegetables.
  • Cook, stirring constantly, until the sauce thickens and coats the chicken and vegetables, about 2-3 minutes.
  • Serve the chicken stir-fry hot over cooked rice or noodles.
  • Garnish with sliced green onions and sesame seeds, if desired.
