  • 2 pounds raw chicken tenders, cut into smaller pieces
  • 1 Tbsp corn oil
  • 1 cup onions, julienned
  • 1 tsp chopped garlic
  • 2 tsp minced ginger root
  • ¾ cup fresh tomatoes, diced
  • 1 tsp ground cumin
  • ½ tsp ground turmeric
  • 1 tsp ground coriander
  • ½ tsp mild chili powder
  • ¼ tsp black pepper
  • ½ tsp ground cloves
  • ½ tsp ground cardamom
  • 2 tsp salt
  • 2 ½ cups canned tomatoes, crushed in puree
  • 1 Tbsp plus ½ tsp water
  • 3 ½ Tbsp chopped fresh cilantro

Instructions

  1. Start by sautéing the onions until they are halfway browned.
  2. Add the garlic and ginger and continue to sauté until golden.
  3. Add the chicken and cook until it is browned.
  4. Add the fresh diced tomatoes and cook for 5 minutes.
  5. Add all the spices and cook for 3 more minutes.
  6. Add the crushed canned tomatoes and cook for 5 minutes.
  7. Then add water and cook on medium heat for 30 minutes.
  8. When the curry is cooked, add fresh cilantro.
