Ingredients
- 1/2 cup rolled oats (ground or quick oats)
- 1 tablespoon chia seeds
- 1/4 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 2 tablespoons raisins or other dried fruit, finely chopped
- 1 teaspoon maple syrup or honey (optional)
- 3/4 cup warm milk (dairy or nondairy)
Instructions
- Preheat your oven to 375°F and grease silicone molds or a mini muffin tin.
- In a medium bowl, combine the oats, chia seeds, cinnamon, vanilla extract, raisins (or dried fruit), and maple syrup or honey, if using.
- Pour in the warm milk and stir well. Let the mixture sit for about 5 minutes.
- Press approximately 1 tablespoon of the batter into each mold or mini muffin cup.
- Bake for 10-14 minutes, or until the oatmeal cups are set and golden brown around the edges.
- Allow the cups to cool in the pan for 5-10 minutes before transferring them to a wire rack to cool completely.
- Serve the oatmeal cups slightly warm or chilled for a delightful breakfast or snack.
