Ingredients:
- 1.5 pounds lobster meat (fresh or frozen), or 1.5 pounds peeled, de-veined fresh shrimp
- 1/2 cup mayonnaise
- 3 tablespoons freshly squeezed lemon juice
- 2 celery stalks with leaves, finely chopped
- 2 tablespoons fresh parsley
- Salt and freshly ground pepper to taste
- 4 brioche or hot dog buns, split and lightly toasted
- 1/3 cup melted butter for brushing
Instructions:
- For lobster rolls:
- Boil the lobster in salted water for 12-13 minutes until cooked through.
- Remove the lobster from the water and place it in a bowl of ice water to cool.
- Once cooled, remove the meat from the lobsters, chopping any large chunks into bite-sized pieces.
- In a bowl, combine the lobster meat, mayonnaise, lemon juice, chopped celery, parsley, and salt and pepper to taste.
