Ingredients:

  • 1.5 pounds lobster meat (fresh or frozen), or 1.5 pounds peeled, de-veined fresh shrimp
  • 1/2 cup mayonnaise
  • 3 tablespoons freshly squeezed lemon juice
  • 2 celery stalks with leaves, finely chopped
  • 2 tablespoons fresh parsley
  • Salt and freshly ground pepper to taste
  • 4 brioche or hot dog buns, split and lightly toasted
  • 1/3 cup melted butter for brushing

Instructions:

  1. For lobster rolls:
  • Boil the lobster in salted water for 12-13 minutes until cooked through.
  • Remove the lobster from the water and place it in a bowl of ice water to cool.
  • Once cooled, remove the meat from the lobsters, chopping any large chunks into bite-sized pieces.
  • In a bowl, combine the lobster meat, mayonnaise, lemon juice, chopped celery, parsley, and salt and pepper to taste.
  • Toss gently to coat the lobster meat evenly with the dressing.
  • Place the lobster salad in the refrigerator for 5-10 minutes to allow the flavors to meld.
  1. Assembly:
  • Brush the cut sides of the buns with melted butter.
  • Toast the buns in a sauté pan until golden brown.
  • Fill the toasted buns with the prepared lobster salad.
