  • 1 ¼ cups plain flour (150g)
  • ½ cup shredded coconut (40g)
  • ½ cup brown sugar (90g)
  • ½ cup unsalted butter (125g)

Rose water caramel filling:

  • ½ cup unsalted butter (155g)
  • 1 can condensed milk (14 oz / 400g)
  • ½ cup golden syrup (145g)
  • 1 tsp rose water

White chocolate topping:

  • 7 oz white chocolate (200g)
  • 1 tbsp coconut oil
  • 2 tbsp dried rose petals

Instructions:

1. Base:

  • Preheat the oven to 350°F (180°C) and line a 8 x 12 inch (20 x 30cm) baking tin with parchment paper.
  • In a mixing bowl, combine the flour, shredded coconut, and brown sugar.
  • Melt the butter, then pour it over the dry ingredients. Mix until well combined.
  • Press the mixture into the prepared baking tin and bake for 15 minutes or until golden.

2. Rose water caramel filling:

  • While the base is baking, combine the butter, condensed milk, golden syrup, and rose water in a saucepan.
