  • ¾ cup ground pistachios (75g)
  • ¾ cup ground almonds (85g)
  • ¾ cup all-purpose flour (85g)
  • 1 ¼ cups icing sugar, plus extra for dusting (200g)
  • 5 large free-range egg whites
  • 7 tbsp unsalted butter (200g)
  • 24 fresh raspberries
  • ¼ cup shelled pistachios, roughly chopped (25g)

Instructions:

  1. Preheat the oven to 350°F (180°C) and grease a friand tin with butter.
  2. In a mixing bowl, combine the ground pistachios, ground almonds, flour, and icing sugar.
  3. Lightly whisk the egg whites in a separate bowl, then pour them into the dry ingredients mixture. Mix until well combined.
  4. Melt the butter in a small pan, then stir it into the friand batter until fully incorporated.
  5. Pour the batter into the prepared friand tin, filling each mold about three-quarters full.
  6. Place two raspberries on top of each friand batter-filled mold and scatter the chopped pistachios over them.
