- 4 zucchini, quartered lengthwise
- 1 cup Panko breadcrumbs
- ½ cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Kosher salt and freshly ground black pepper, to taste
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 2 tablespoons chopped fresh parsley leaves

Instructions:
- Preheat the Oven:
- Set your oven to 425°F (220°C).
- Coat a cooling rack with nonstick spray and place it on a baking sheet.
- Create the Coating:
- In a large bowl, combine Panko breadcrumbs, freshly grated Parmesan cheese, and Italian seasoning.
- Season the mixture with salt and freshly ground black pepper.
- Dredge the Zucchini:
- Working in batches:
- Dredge each zucchini quarter in all-purpose flour.
- Dip it into beaten eggs.
- Roll it in the Panko mixture, pressing to coat evenly.
