Ingredients:

  • 1 (4-lb.) whole chicken
  • 1/4 cup extra-virgin olive oil
  • Juice of 2 limes
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Kosher salt
  • Freshly ground black pepper

For the Green Sauce:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 cup fresh cilantro
  • 1 jalapeño, seeds removed
  • 2 cloves garlic
  • Juice of 1 lime
  • Kosher salt
  • Freshly ground black pepper
  • 1/4 cup extra-virgin olive oil

Instructions:

  1. Marinate the Chicken:
    • In a blender, combine the extra-virgin olive oil, lime juice, minced garlic, paprika, dried oregano, ground cumin, salt, and pepper.
    • Blend until smooth.
    • Loosen the skin of the chicken and spoon 2/3 of the marinade under the skin. Rub the rest over the top.
    • Refrigerate the chicken for at least 6 hours or overnight.
  2. Roast the Chicken:
    • Preheat the oven to 425°F (220°C).
    • Set the chicken on a rack in a roasting pan.
    • Roast for 20 minutes until the skin is golden.
    • Reduce the heat to 375°F (190°C) and roast for about 1 hour and 10 minutes more.
    • Let the chicken rest, covered with foil, for 20 minutes before carving.
  3. Make the Green Sauce:
    • In a blender, combine the mayonnaise, sour cream, cilantro, jalapeño, garlic, lime juice, salt, and pepper.
    • Process until smooth.
    • While the motor is running, drizzle in the olive oil. The sauce will thicken as it sits.
    • Adjust the heat by adding more jalapeño seeds if desired.
  4. Serve:
    • Carve the chicken and serve with the green sauce.
