Ingredients

  • 1 cup white rice (short-grain or medium-grain)
  • 2 cups water
  • 2 cups whole milk
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Raisins or dried fruit

Method

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium-sized saucepan, combine the rinsed rice, water, whole milk, sugar, vanilla extract, ground cinnamon (if using), and a pinch of salt. Stir well to combine.
  3. Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally.
  4. Once the mixture comes to a boil, reduce the heat to low and cover the saucepan with a lid. Simmer the rice mixture gently for about 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent the rice from sticking.
  5. If using raisins or dried fruit, you can add them to the rice mixture about halfway through cooking, allowing them to plump up and infuse flavor into the dish.
  6. Once the rice is cooked and has reached a creamy consistency, remove the saucepan from the heat.
  7. Taste the rice and adjust the sweetness if necessary by adding more sugar.
