  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 8 small flour tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa

Directions

  1. Sauté the Veggies:
    • Heat vegetable oil in a large skillet over medium-high heat.
    • Add sliced onions and bell peppers. Sauté until they start to soften, about 3-4 minutes.
  2. Cook the Chicken:
    • Push the veggies to one side of the skillet.
    • Add the sliced chicken to the other side. Season with chili powder, cumin, paprika, garlic powder, salt, and pepper.
    • Cook until chicken is no longer pink and nicely browned, about 5-6 minutes.
  3. Warm the Tortillas:
    • Heat the flour tortillas in a dry skillet or microwave until warm and pliable.
  4. Assemble the Tacos:
    • Lay a warm tortilla flat.
    • Spoon some chicken and sautéed veggies onto the center.
    • Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and salsa if desired.
