- 1 lb boneless, skinless chicken breasts, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- 2 tablespoons vegetable oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- 8 small flour tortillas
- Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa
Directions
- Sauté the Veggies:
- Heat vegetable oil in a large skillet over medium-high heat.
- Add sliced onions and bell peppers. Sauté until they start to soften, about 3-4 minutes.
- Cook the Chicken:
- Push the veggies to one side of the skillet.
- Add the sliced chicken to the other side. Season with chili powder, cumin, paprika, garlic powder, salt, and pepper.
- Cook until chicken is no longer pink and nicely browned, about 5-6 minutes.
- Warm the Tortillas:
- Heat the flour tortillas in a dry skillet or microwave until warm and pliable.
- Assemble the Tacos:
- Lay a warm tortilla flat.
- Spoon some chicken and sautéed veggies onto the center.
- Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and salsa if desired.
