Baked Fish with Lemon and Herbs is light, flavorful, and incredibly easy to make.

Ingredients

  • 4 fillets of white fish (such as tilapia, cod, or halibut), about 6 ounces each
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, thinly sliced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh thyme
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes
  • Lemon wedges for serving
  • Fresh parsley or dill sprigs for garnish

Method

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to fit the fish fillets in a single layer.
  2. Pat the fish fillets dry with paper towels and place them in the prepared baking dish. Season both sides of the fish with salt and black pepper.
  3. In a small bowl, whisk together the olive oil, minced garlic, fresh lemon juice, chopped herbs, and red pepper flakes (if using).
  4. Drizzle the olive oil mixture evenly over the fish fillets, making sure they are well coated.
  5. Arrange the lemon slices on top of the fish fillets, overlapping them slightly.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
  7. Remove the foil from the baking dish and switch the oven to broil. Broil the fish for an additional 2-3 minutes, or until the lemon slices are lightly caramelized and the edges of the fish are golden brown.
