Baked Fish with Lemon and Herbs is light, flavorful, and incredibly easy to make.

Ingredients
- 4 fillets of white fish (such as tilapia, cod, or halibut), about 6 ounces each
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, thinly sliced
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh thyme
- Salt and black pepper to taste
- 1/4 teaspoon red pepper flakes
- Lemon wedges for serving
- Fresh parsley or dill sprigs for garnish
Method
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to fit the fish fillets in a single layer.
- Pat the fish fillets dry with paper towels and place them in the prepared baking dish. Season both sides of the fish with salt and black pepper.
- In a small bowl, whisk together the olive oil, minced garlic, fresh lemon juice, chopped herbs, and red pepper flakes (if using).
- Drizzle the olive oil mixture evenly over the fish fillets, making sure they are well coated.
- Arrange the lemon slices on top of the fish fillets, overlapping them slightly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove the foil from the baking dish and switch the oven to broil. Broil the fish for an additional 2-3 minutes, or until the lemon slices are lightly caramelized and the edges of the fish are golden brown.
