Ingredients
- 8 ounces (about 225g) multigrain spaghetti
- 2 cups assorted vegetables (such as bell peppers, zucchini, cherry tomatoes, and red onion), chopped into bite-sized pieces
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried Italian herbs
- Salt and black pepper to taste
- Grated Parmesan cheese for serving
- Fresh basil leaves for garnish
Method
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
- In a large bowl, toss the assorted vegetables with olive oil, minced garlic, dried Italian herbs, salt, and black pepper until evenly coated.
- Spread the seasoned vegetables in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and lightly caramelized, stirring halfway through cooking.
- While the vegetables are roasting, cook the multigrain spaghetti according to the package instructions until al dente. Drain the spaghetti and set aside.
- Once the vegetables are done roasting, remove them from the oven and set aside.
- In a large skillet, combine the cooked multigrain spaghetti and roasted vegetables. Toss gently to mix everything together.
- If desired, drizzle a little extra olive oil over the spaghetti and vegetables for added flavor.
