Ingredients
- 8 ounces (about 225g) whole wheat spaghetti
- 1/4 cup extra virgin olive oil
- 4 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt to taste
- Freshly ground black pepper to taste
- 1/4 cup chopped fresh parsley
- Grated Parmesan cheese for serving
Directions
- Cook the whole wheat spaghetti according to the package instructions until al dente. Reserve about 1/2 cup of pasta cooking water, then drain the spaghetti and set aside.
- In a large skillet, heat the extra virgin olive oil over medium heat. Add the thinly sliced garlic and red pepper flakes. Sauté for about 1-2 minutes, or until the garlic is lightly golden and fragrant. Be careful not to burn the garlic.
- Add the cooked whole wheat spaghetti to the skillet with the garlic and olive oil. Toss well to coat the spaghetti evenly with the garlic-infused oil. If the spaghetti seems dry, you can add a splash of the reserved pasta cooking water to loosen it up.
- Season the spaghetti with salt and freshly ground black pepper to taste. Toss again to combine.
- Remove the skillet from the heat and sprinkle the chopped fresh parsley over the spaghetti. Toss once more to incorporate the parsley.
