Organic Spaghetti with Tomato Basil Sauce

- 8 ounces (about 225g) organic spaghetti
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- 1 can (14 ounces) organic diced tomatoes
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving

- Cook the organic spaghetti according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta cooking water.
- In a large skillet, heat the extra virgin olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
- Add the diced tomatoes (with their juices) to the skillet. Bring to a simmer and cook for about 10 minutes, stirring occasionally, until the sauce has thickened slightly.
- Stir in the chopped basil leaves and season the sauce with salt and pepper to taste. If the sauce seems too thick, you can thin it out with some of the reserved pasta cooking water.
- Add the cooked organic spaghetti to the skillet with the tomato basil sauce. Toss well to coat the spaghetti evenly with the sauce.
