Chicken Kiev is a super delicious dish made from tenderized chicken breast, stuffed with compound butter made with garlic and parsley, and then rolled and breaded. Once ready, it’s either fried or baked, resulting in a crispy exterior and a molten river of garlic butter inside.

Directions:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup (1 stick) unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • Salt and pepper, to taste
  • Vegetable oil, for frying

Instructions:

  1. Prepare Garlic Butter: In a small bowl, combine softened butter, minced garlic, and chopped parsley. Mix until well combined. Place the garlic butter mixture onto a sheet of plastic wrap, shape it into a log, and freeze until firm.
  2. Prepare Chicken: Using a sharp knife, make a slit in each chicken breast to create a pocket. Cut the garlic butter log into four equal portions and stuff each portion into the pockets of the chicken breasts. Season the chicken with salt and pepper.
  3. Coat Chicken: Place flour, beaten eggs, and breadcrumbs into separate shallow bowls. Dredge each chicken breast in flour, dip into beaten eggs, then coat with breadcrumbs, pressing gently to adhere.
  4. Fry Chicken: Heat vegetable oil in a large skillet over medium heat. Once hot, add the breaded chicken breasts and cook until golden brown and cooked through, about 6-8 minutes per side.
  5. Serve: Remove the Chicken Kiev from the skillet and drain on paper towels to remove excess oil. Serve hot with your favorite side dishes.

Optional Cook’s Note: If fresh parsley is unavailable, you can use dried parsley or other herbs like dill or chives for flavor variation.
