- 8 oz (225g) spaghetti
- 4 slices bacon, diced
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup grated Parmesan cheese, plus extra for serving
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook Spaghetti: Cook the spaghetti according to the package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti and set aside.
- Cook Bacon: In a large skillet, cook the diced bacon over medium heat until crispy, about 5-7 minutes. Add minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
- Prepare Sauce: In a small bowl, whisk together the eggs, grated Parmesan cheese, and a pinch of black pepper.
- Combine: Add the cooked spaghetti to the skillet with the bacon and garlic. Toss to combine, then remove the skillet from the heat. Pour the egg and cheese mixture over the spaghetti, stirring quickly to coat the pasta evenly. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
- Serve: Divide the spaghetti carbonara among serving plates. Garnish with additional grated Parmesan cheese and chopped parsley. Serve immediately and enjoy!
