  • 6 hard-boiled eggs, peeled and chopped
  • 1/4 cup mayonnaise

  • Bread slices, lettuce leaves, tomato slices for sandwiches

Method

  1. In a mixing bowl, combine the chopped hard-boiled eggs, mayonnaise, and Dijon mustard.
  2. Add the chopped fresh chives and parsley, if using. These herbs add extra flavor to the egg salad, but you can omit them if you prefer.
  3. Season the mixture with salt and pepper to taste. Be sure to taste the egg salad and adjust the seasoning according to your preference.
  4. Mix all the ingredients together until well combined and the eggs are evenly coated with the mayo and mustard mixture.
  5. Spread the egg salad onto bread slices. You can use any type of bread you like, such as white, whole wheat, or sourdough.
  6. Top the egg salad with lettuce leaves and tomato slices, if desired, to add freshness and extra crunch to the sandwiches.
  7. Place another slice of bread on top to form a sandwich.

You can cut the sandwiches into halves or quarters for easier handling, then Serve the egg salad sandwiches immediately, or wrap them in parchment paper or plastic wrap to pack them for lunch or a picnic.
