Ingredients:
- 2 cups all-purpose flour
- 1 large egg
- 1/2 cup sour cream
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon salt
- Filling of your choice (potato and cheese, sauerkraut and mushroom, etc.)
- Optional toppings: caramelized onions, sour cream, chopped chives
Instructions:
- Prepare Dough: In a mixing bowl, combine flour and salt. In another bowl, whisk together egg, sour cream, and melted butter. Gradually add wet ingredients to the flour mixture, stirring until a dough forms. Knead the dough on a floured surface until smooth, then cover and let it rest for 10 minutes.
- Roll Out Dough: Divide the dough into two portions. Roll out each portion on a floured surface until about 1/8 inch thick. Use a round cookie cutter or glass to cut out circles of dough.
- Fill and Seal: Place a spoonful of filling in the center of each dough circle. Fold the dough over the filling to form a half-moon shape. Press the edges firmly to seal, using a fork to crimp if desired.
- Boil Pierogi: Bring a large pot of salted water to a boil. Carefully drop the pierogi into the boiling water, working in batches to avoid overcrowding. Cook for 3-4 minutes, or until the pierogi float to the surface.
- Optional: Sauté or Fry: For extra flavor, sauté boiled pierogi in butter until lightly browned, or fry them in oil until crispy.
- Serve: Serve the pierogi hot, topped with optional toppings like caramelized onions, sour cream, or chopped chives.
Optional Cook’s Note: Substitute the traditional filling ingredients with mashed potatoes and shredded cheddar cheese for a quicker and easier version.
