Directions:

  1. Ingredients:
  • 2 medium beets, peeled and grated
  • 2 medium potatoes, diced
  • 1 onion, finely chopped
  • 2 carrots, grated
  • 2 cloves garlic, minced
  • 4 cups vegetable or beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar
  • 1 bay leaf
  • Salt and pepper to taste
  • Sour cream and fresh dill for garnish
  1. Preparation:
  • In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  • Add the grated beets, carrots, and diced potatoes to the pot. Stir well to combine.
  1. Cooking:
  • Pour in the vegetable or beef broth, add the bay leaf, tomato paste, vinegar, salt, and pepper. Bring to a boil, then reduce the heat to low. Cover and simmer for 10-12 minutes, or until the vegetables are tender.
  1. Serve:
  • Once the borscht is ready, remove the bay leaf and discard. Ladle the soup into bowls and garnish with a dollop of sour cream and a sprinkle of fresh dill.

Optional Cook’s Note: If you prefer a heartier version, you can add cooked beans or shredded chicken to the soup.
