- Ingredients:
- 1 cup of rice
- 1 1/2 cups of chicken broth
- 1/2 cup of diced tomatoes
- 1/4 cup of diced bell peppers (any color)
- 1/4 cup of frozen peas
- 1/4 cup of cooked shrimp
- 1/4 cup of cooked chicken (optional)
- 1/4 teaspoon of saffron threads
- 1/2 teaspoon of paprika
- Salt and pepper to taste
- Lemon wedges for serving
- Preparation:
- In a large skillet, combine the rice, chicken broth, diced tomatoes, bell peppers, peas, saffron threads, paprika, salt, and pepper.
- Bring the mixture to a boil over medium-high heat.
- Cooking:
- Once boiling, reduce the heat to low and cover the skillet with a lid.
- Let the Paella simmer for 12 minutes, or until the rice is tender and the liquid is absorbed.
- Finishing Touches:
- Uncover the skillet and gently stir in the cooked shrimp and chicken (if using).
- Cook for an additional 2-3 minutes, or until the shrimp and chicken are heated through.
- Serve:
- Remove the Paella from the heat and let it sit for a few minutes before serving.

Optional Cook’s Note: If you don’t have saffron, you can substitute with turmeric for a similar color and flavor.
