Directions:

  1. Ingredients:
  • 1 cup of rice
  • 1 1/2 cups of chicken broth
  • 1/2 cup of diced tomatoes
  • 1/4 cup of diced bell peppers (any color)
  • 1/4 cup of frozen peas
  • 1/4 cup of cooked shrimp
  • 1/4 cup of cooked chicken (optional)
  • 1/4 teaspoon of saffron threads
  • 1/2 teaspoon of paprika
  • Salt and pepper to taste
  • Lemon wedges for serving
  1. Preparation:
  • In a large skillet, combine the rice, chicken broth, diced tomatoes, bell peppers, peas, saffron threads, paprika, salt, and pepper.
  • Bring the mixture to a boil over medium-high heat.
  1. Cooking:
  • Once boiling, reduce the heat to low and cover the skillet with a lid.
  • Let the Paella simmer for 12 minutes, or until the rice is tender and the liquid is absorbed.
  1. Finishing Touches:
  • Uncover the skillet and gently stir in the cooked shrimp and chicken (if using).
  • Cook for an additional 2-3 minutes, or until the shrimp and chicken are heated through.
  1. Serve:
  • Remove the Paella from the heat and let it sit for a few minutes before serving.
  • Garnish with lemon wedges and serve hot.

Optional Cook’s Note: If you don’t have saffron, you can substitute with turmeric for a similar color and flavor.
