- 1 cup cold sparkling water
- Salt and pepper to taste
- Vegetable oil for frying
- 4 large potatoes, peeled and cut into thick fries
Directions:
- In a large bowl, whisk together the flour, baking powder, salt, and pepper.
- Gradually pour in the cold sparkling water while whisking until a smooth batter forms. Let the batter rest while you prepare the potatoes.
- Heat the vegetable oil in a deep fryer or large pot to 350°F (180°C).
- Carefully add the potato fries to the hot oil and fry until golden brown and crispy, about 5-7 minutes. Remove them from the oil and drain on paper towels. Season with salt while still hot.
- Dip each fish fillet into the batter, ensuring it’s fully coated.
- Gently place the battered fish into the hot oil and fry for 4-6 minutes until golden brown and cooked through.
- Remove the fried fish from the oil and drain on paper towels.
- Serve the fish and chips hot with tartar sauce, malt vinegar, or your favorite condiments.
