- 1 lb (about 450g) carrots, peeled and sliced diagonally
- 2 tablespoons unsalted butter
- 2 tablespoons honey
- 1/4 cup vegetable broth
- Salt and pepper to taste

Prep the Carrots

Peel the carrots and slice them diagonally into 1/4-inch thick pieces.

Cook the Carrots
In a large skillet over medium heat, melt the butter. Add the sliced carrots to the skillet and cook for about 5 minutes, stirring occasionally until they start to caramelize slightly.
Add the Glaze
Drizzle the honey over the carrots and stir to coat evenly. Season with salt and pepper to taste.
Simmer
Pour the vegetable broth into the skillet and bring to a simmer. Reduce the heat to low and let the carrots simmer for about 10-15 minutes, or until they are tender and the liquid has thickened into a glaze, stirring occasionally.
