Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup cold water
  • 1 cup packed brown sugar
  • 1/2 cup corn syrup
  • 1/4 cup unsalted butter, melted
  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins or pecans (optional)

Directions:

  1. Prepare the Crust:
  • In a large bowl, mix the flour and granulated sugar. Add the chilled, cubed butter and cut it into the flour mixture using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  • Gradually add cold water, mixing until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  1. Make the Filling:
  • Preheat your oven to 375°F (190°C). In a separate bowl, combine brown sugar, corn syrup, melted butter, beaten eggs, and vanilla extract until well mixed.
  1. Assemble the Tarts:
  • Roll out the chilled dough on a floured surface and cut it into circles to fit your tart molds. Press the dough into the molds.
  • If using, place a few raisins or pecans into each tart shell.
  • Pour the filling over the raisins or pecans, filling each tart shell about 3/4 full.
  1. Bake and Serve:
  • Bake the tarts in the preheated oven for 15-18 minutes or until the crust is golden and the filling is set.
  • Let the tarts cool in the molds for a few minutes before transferring them to a wire rack to cool completely.
  • Serve warm or at room temperature, and enjoy the buttery goodness!

Optional Cook’s Note:

Feel free to customize these butter tarts by swapping out the raisins or pecans for chocolate chips or coconut flakes for a delicious variation!
