Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 cup small pasta (such as ditalini or elbow)
  • 2 cups chopped spinach or kale
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving (optional)
  • Fresh basil, for garnish (optional)

Directions:

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add diced onion, minced garlic, diced carrots, and diced celery. Sauté for 5-7 minutes until vegetables are tender.
  2. Add Tomatoes and Broth: Stir in diced tomatoes and vegetable broth. Bring to a simmer and cook for 5 minutes.
  3. Add Beans and Pasta: Add drained and rinsed kidney beans, along with the pasta. Simmer for another 5 minutes until pasta is cooked al dente.
  4. Stir in Greens: Add chopped spinach or kale to the pot and stir until wilted, about 1-2 minutes.
  5. Season and Serve: Season the soup with salt and pepper to taste. Ladle into bowls and serve hot. Garnish with grated Parmesan cheese and fresh basil, if desired.

Cook’s Note: For a heartier soup, you can add additional vegetables such as zucchini, bell peppers, or green beans. Feel free to customize the recipe according to your preferences.
