Ingredients:

  • 2 large eggs
  • 100 grams fine green beans (haricots verts)
  • 200 grams sunblush tomatoes (in seasoned oil)
  • 100 grams black olives (sliced and pitted)
  • 1 225-gram jar of tuna (or canned tuna), drained
  • 250 grams torn iceberg lettuce leaves
  • 4 teaspoons extra virgin olive oil
  • Juice of ½ lemon
  • ½ teaspoon Maldon sea salt flakes (or a pinch of table salt)
  • ½ teaspoon sugar
  • 40 grams croutons (store-bought or homemade)
  • 6 anchovy fillets (optional, for extra flavor)
  • A handful of fresh basil leaves

Directions:

  1. Boil the Eggs:
    • Place the eggs in a saucepan and cover them with cold water by about an inch.
    • Bring to a simmer over medium-high heat, then cover, remove from heat, and let stand for 10-12 minutes.
    • Drain and run the eggs under cold water to cool. Peel them.
  2. Blanch the Green Beans:
    • Bring a separate saucepan of salted water to a boil.
    • Add the green beans (haricots verts) and cook until crisp-tender and bright green, about 2-4 minutes.
    • Drain and immediately plunge them into ice water to cool. Pat them dry.
  3. Assemble the Salad:
    • Arrange the torn iceberg lettuce leaves on a serving platter.
    • Scatter the sunblush tomatoes, sliced black olives, and cooked green beans over the lettuce.
    • Add the quartered hard-boiled eggs and chunks of tuna.
    • Sprinkle with croutons and torn basil leaves.
  4. Whisk the Dressing:
    • In a small bowl, whisk together the extra virgin olive oil, lemon juice, Maldon sea salt flakes, and sugar.
    • Drizzle the dressing over the salad.
  5. Optional Anchovy Garnish:
    • If you love anchovies, lay a few fillets across the top for an extra layer of flavor.

Cook’s Note:

  • For a heartier version, add boiled new potatoes or steamed baby red potatoes.
  • Feel free to customize by using your favorite lettuce greens or adding capers.
