Ingredients:

  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs)
  • 4 slices of thick-cut bacon, chopped
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup red wine (preferably Burgundy or Pinot Noir)
  • 1 cup chicken broth
  • 8 oz cremini mushrooms, sliced
  • 2 sprigs of fresh thyme
  • 2 bay leaves
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish

Directions:

  1. Sear the Chicken:
    • In a large skillet or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside.
    • Season the chicken thighs with salt and pepper.
    • In the same skillet, sear the chicken thighs (skin side down) until golden brown. Remove them from the skillet.
  2. Sauté the Aromatics:
    • In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent.
    • Add the sliced mushrooms and cook until they release their moisture.
  3. Deglaze with Wine:
    • Pour in the red wine, scraping up any browned bits from the bottom of the skillet.
    • Add the chicken broth, thyme sprigs, bay leaves, and the reserved crispy bacon.
    • Return the seared chicken thighs to the skillet.
  4. Simmer and Infuse:
    • Cover the skillet and let everything simmer over low heat for about 20 minutes. The flavors will meld beautifully.
    • Remove the chicken and keep it warm.
  5. Thicken the Sauce:
    • If needed, remove excess fat from the sauce.
    • Simmer the sauce uncovered until it thickens slightly.
  6. Serve and Garnish:
    • Plate the chicken thighs, spoon the rich sauce over them, and sprinkle with chopped fresh parsley.
    • Serve with crusty bread, mashed potatoes, or buttered noodles.

Cook’s Note:

  • If you don’t have red wine, you can use chicken broth instead.
  • For a healthier version, remove the chicken skin before searing.
