Peanut butter cookies are a classic treat loved by many for their rich, nutty flavor and soft, chewy texture.

- 1 cup peanut butter (creamy or chunky)
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract

- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- In a mixing bowl, combine the peanut butter, granulated sugar, egg, and vanilla extract. Mix until well combined and the dough comes together.
- If desired, you can roll the dough into balls and then roll them in granulated sugar before placing them on the baking sheet. This step is optional but adds a nice sweetness and creates a crisscross pattern on the cookies.
- Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart. Use a fork to flatten each dough ball slightly and create a crisscross pattern on top.
- Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.
Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
