Ingredients

  • 1 whole chicken (3 1/2 to 4 1/2 lbs)
  • 2 tablespoons ghee or butter
  • 2 oranges (for juice and slices)
  • 4-5 yellow, gold, or russet potatoes (sliced about 1/2 inch thick)
  • Fresh rosemary and thyme
  • Salt and pepper

Directions

  1. Preheat the Oven:
    • Place a cast iron skillet inside the oven and preheat to 425°F. The skillet will be our flavor canvas.
  2. Prepare the Chicken:
    • Rinse the chicken inside and out, then pat it dry with paper towels.
    • Pierce holes in one orange with a fork and place it inside the chicken cavity.
  3. Season and Arrange:
    • Generously season the chicken with salt and pepper on the outside.
    • Scatter the sliced potatoes around the chicken in the preheated skillet.
    • Lay orange slices over the chicken.
  4. Bake to Perfection:
    • Bake for about an hour until the chicken skin is golden brown and the meat easily detaches from the bone.
    • The potatoes should also be nicely baked and golden brown.
  5. Garnish and Serve:
    • Garnish with fresh pomegranate seeds and parsley if desired.
    • Serve while warm, and let the flavors transport you to food heaven!

Cook’s Note

  • Potato Revelation: These thinly sliced potatoes soak up all the juicy goodness from the chicken. Crispy edges meet tender centers—pure bliss!
  • Alternative Potatoes: Feel free to use your favorite type—yellow, gold, or russet.
  • Fresh Herbs: Rosemary and thyme add aromatic magic. If you have them, use them!
