  • Rolled Oats
  • Bananas
  • Greek yogurt (full-fat and unsweetened)
  • Eggs

Cake Pans:
For best results, use three 4 or 5-inch cake pans. You can use round or fun-shaped pans. Grease the pans or line them with parchment paper for easier removal.

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease or line your cake pans and set them aside.
  2. In a food processor or blender, pulse the rolled oats until they reach a flour-like consistency.
  3. In a large bowl, combine the oat flour with the rest of the dry ingredients.
  4. In a separate bowl, mash the ripe bananas and mix them with the Greek yogurt and eggs.
  5. Combine the wet and dry ingredients until well combined, but be careful not to overmix.
  6. Evenly distribute the batter into the prepared cake pans.
  7. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 5 minutes, then transfer them to a wire rack to cool completely.

Frosting:

  • Cream Cheese: Soften an 8-ounce block of cream cheese at room temperature for at least an hour, then beat until fluffy.
  • Coconut Cream: Refrigerate a 15-ounce can of full-fat coconut cream overnight, scoop out the cream at the top, and beat until light and fluffy.
  • Whipped Cream: Beat 1 cup of heavy whipping cream until it reaches the consistency of whipped cream.
  • Greek Yogurt: Use 1-2 cups of full-fat Greek yogurt for a lighter option.

Decorating Options:

  • Add vanilla extract, maple syrup, or date syrup to your frosting for added flavor.
  • For a natural coloring, blend freeze-dried raspberries (or other fruits) into a powder and mix into your frosting.

Make-Ahead Tips:

  • Bake the cakes a day before and store them wrapped in plastic wrap at room temperature overnight to keep them moist.
  • Refrigerate the frosting overnight, but bring it to room temperature before frosting the cake for easier spreading.
